Technofood MS 91 — Phosphate & Citrate Creaming Blend
Technofood MS 91 is a phosphate & citrate creaming blend of sodium phosphate (E339), diphosphate (E450), polyphosphate (E452) and trisodium citrate (E331).
Formulated with strong creaming functionality and weak ion-exchange capacity, MS 91 is the right tool for spreadable processed cheese: it emulsifies and plasticises the cheese mass into a smooth, fine fat emulsion without over-stripping calcium from the protein. Works from finished cheeses (kashkaval, white cheese, cheddar, emmentaler, gouda) or fresh acid-set curd.
