Technofood MS 85 is a citrate-phosphate emulsifying blend of trisodium citrate (E331), polyphosphate (E452) and triphosphate (E451).
Dosed into the twin-screw steam cooker, MS 85 leverages its citrate fraction to deliver superior remelting behaviour — making it ideal for pizza cheese and a complementary partner to MS 31 in block kashkaval production.
