Silvamicin — Natural Natamycin Antifungal (50%)

Silvamicin is a 50% natamycin preservative manufactured by Technofood — the food industry's go-to natural antifungal for the surfaces of ripened cheeses and dried, cured sausages.

Natamycin (E235) is a natural antifungal produced by Streptomyces natalensis. It binds to ergosterol in fungal cell membranes, controlling moulds and yeasts at very low doses. Because bacterial membranes contain no ergosterol, it has no effect on the lactic acid starter cultures that drive fermentation — the selectivity the cheese and dry-cured meat industries have relied on for decades.
